The idea behind this wine was to make a typical Sauvignon Blanc from Steiermark in the way it was done (and tasted) in the 80ies but in a “natural” way.nFresh, juicy, acidi, slightly grassy, linear, mineralic but also enjoyable and thirst quenching.nThe label resembles the weather conditions in Steiermark and the constant wind on top of our hilly vineyards.

A co-production from Katharina Tinnacher and Christoph Neumeister. We use our late ripening, cooler parcels to be able to harvest light in sugar, high in acidity but ripe, aromatic, 'cool' grapes.1
The grapes are hand harvested. Short maceration time on skins up to 12 hours, spontaneous fermentation followed by a malolactic fermentation, maturation on full yeast for 6 months and another 6 months on the fine lees, then blended and bottled without fining or filtration, just natural sedimentation through gravity. Small amount of sulfur just before bottling, total sulfur under 50 mg.2
